Where can I find demo sites using RubyOnRails? How would you know if a site is using Rails?

Open Campground is written in ROR.  You can see a demo by going to opencampground.com

I will warn you that it is written using version 2.2.2 of Ruby on Rails.  This is not the latest version but it is packaged as a frozen app so it has that version of rails packaged with it.

Excellent! I checked it out the site but I'm not like the source code sad. How would you know if the site was built in RoR? Does this depend on text editor to display nice coding?

Just using the site you probably would not know the site was ROR unless you looked carefully at the URLs generated and what the html looked like in detail.  But the objective is to present a site and not bother the user with the details of how it is done.
