Topic: Dependencies in an Open Source Application

I'm writing an application for the Bible College I work at that, after it's deployed and stable, will be tidied up and open sourced.

To that end, I'm wondering if it's best to keep the number of gems I use down, so that there are fewer dependencies. Is it even a problem to have many gems. They're all doing something, but some, like ryanb's nested_form, I could do without and write my own helpers instead.
